Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup Italian seasoned bread crumbs
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons olive oil
  • 2 tablespoons melted butter
  • 2 cloves garlic, minced
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Grease a baking dish lightly with olive oil.
  2. In a shallow bowl, combine Parmesan cheese, bread crumbs, garlic powder, salt, and black pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken breast first into the beaten eggs, then coat thoroughly with the Parmesan-bread crumb mixture.
  5. Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  6. Place the coated chicken breasts in the skillet and cook for 2-3 minutes per side until golden brown.
  7. Transfer the chicken to the prepared baking dish. Drizzle with melted butter.
  8. Bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
  9. Garnish with fresh parsley if desired and serve warm.

Notes

For extra crispiness, broil the chicken for the last 2 minutes of baking. Serve with a side of steamed vegetables or over pasta for a complete meal.
