These fudgy sweet potato brownies are a healthier twist on a classic dessert, packed with moisture and a rich chocolate flavor. The sweet potato adds natural sweetness and a deliciously soft texture.

  • 1 medium sweet potato, cooked and mashed (about 1 cup)
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease and flour an 8×8 inch baking pan.
  2. In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Mix well.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed sweet potato until well combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Stir in the chocolate chips, if using.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  9. Let the brownies cool completely in the pan before cutting into squares.

Notes

For an even richer flavor, add a teaspoon of espresso powder to the dry ingredients or top with a sprinkle of sea salt after baking.
