  • 1 1/2 cups chocolate wafer crumbs
  • 6 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 4 ounces bittersweet chocolate, melted and cooled
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon vanilla extract
  • Chocolate shavings, for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine chocolate wafer crumbs, melted butter, and 1/4 cup granulated sugar. Press into the bottom and up the sides of a 9-inch pie plate.
  3. Bake for 8-10 minutes, or until set. Let cool completely.
  4. In a large bowl, cream together 1/2 cup softened butter, 3/4 cup granulated sugar, and salt until light and fluffy. Beat in 1 teaspoon vanilla extract.
  5. Beat in eggs one at a time, beating well after each addition.
  6. Gradually beat in melted and cooled chocolate until smooth.
  7. Pour filling into cooled crust. Cover and refrigerate for at least 4 hours, or overnight.
  8. In a chilled bowl, beat heavy cream, powdered sugar, and 1/4 teaspoon vanilla extract until stiff peaks form.
  9. Spread whipped cream over the pie or pipe decoratively.
  10. Garnish with chocolate shavings.
  11. Serve chilled.

Notes

For an extra touch, sprinkle a little sea salt over the chocolate shavings before serving. Enjoy!
