Filipino Chicken Adobo

Filipino Chicken Adobo is a flavorful and tangy stew made with marinated chicken simmered in vinegar, soy sauce, garlic, and spices. This classic Filipino dish is tender, savory, and easy to prepare.

  • 2 lbs chicken thighs, bone-in and skin-on
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 6 cloves garlic, crushed
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 2 tablespoons cooking oil
  • 1 medium onion, sliced
  • 1 tablespoon brown sugar (optional)
  • Salt to taste

Instructions

  1. In a large bowl, combine chicken, soy sauce, and crushed garlic. Marinate for at least 30 minutes, preferably 1 hour.
  2. Heat cooking oil in a large skillet over medium heat. Sauté onions until translucent.
  3. Add the marinated chicken (reserve marinade) and cook until skin is lightly browned on all sides.
  4. Pour in reserved marinade, vinegar, water, bay leaves, peppercorns, and brown sugar if using. Do not stir.
  5. Bring to a boil, then lower heat and simmer uncovered for 30-40 minutes until chicken is tender and sauce is reduced. Stir occasionally once boiling.
  6. Season with salt to taste and remove bay leaves before serving.
  7. Serve hot with steamed white rice.

Notes

For a richer flavor, try adding a splash of coconut milk towards the end of cooking or serve with garlic fried rice.
