Festive Mini Christmas Cakes with Ganache

Delight in these festive mini Christmas cakes topped with a rich chocolate ganache, perfect for holiday celebrations or gift-giving.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/4 cup milk
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/2 cup mixed dried fruits (raisins, cranberries, chopped dates)
  • 1/4 cup chopped nuts (walnuts or pecans)
  • For Ganache:
    – 1/2 cup heavy cream
    – 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and grease mini cake molds or muffin tin.
  2. In a bowl, cream together butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until combined.
  4. In a separate bowl, whisk flour, baking powder, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture alternating with milk, mixing gently.
  6. Fold in dried fruits and chopped nuts evenly.
  7. Divide batter evenly into prepared molds and bake for 18-22 minutes or until a toothpick comes out clean.
  8. Let cakes cool completely on a wire rack.
  9. To prepare ganache, heat heavy cream until it simmers, then pour over chocolate chips.
  10. Let stand for 2 minutes, then stir until smooth.
  11. Dip the tops of each cooled mini cake into ganache or spoon it over to cover.
  12. Allow ganache to set before serving or storing.

Notes

For extra festivity, decorate the ganache tops with edible gold flakes, sprinkles, or small candy canes.
