A creamy and nutritious Egg Avocado Salad combining ripe avocado and boiled eggs, perfect for a quick, healthy meal or satisfying snack.

Ingredients

  • 2 ripe avocados
  • 4 hard-boiled eggs
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Peel and pit the avocados, then mash them in a medium bowl.
  2. Chop the hard-boiled eggs into bite-sized pieces and add to the mashed avocado.
  3. Stir in mayonnaise, Dijon mustard, and lemon juice until well combined.
  4. Add the chopped red onion and cilantro, mixing gently.
  5. Season with salt and pepper to taste.
  6. Serve immediately or chill for 15 minutes to enhance flavors.

Notes

For extra crunch, sprinkle chopped celery or toasted nuts on top before serving.
