Easy Mini Vanilla Christmas Cakes

These adorable mini vanilla Christmas cakes are easy to make and perfect for holiday gifting or individual desserts. They’re moist, flavorful, and decorated with festive icing.

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • Vanilla buttercream frosting
  • Sprinkles for decoration

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a mini muffin tin.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Fill each muffin cup about 2/3 full.
  6. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.
  8. Frost with vanilla buttercream and decorate with sprinkles.

Notes

For a richer flavor, add a tablespoon of rum or brandy to the batter. You can also use different extracts like almond or lemon.
