  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups semisweet chocolate chips
  • 1 tablespoon coconut oil (optional, for smoother chocolate coating)

Instructions

  1. In a medium bowl, combine peanut butter and softened butter until smooth.
  2. Mix in powdered sugar and vanilla extract until well blended and dough forms.
  3. Shape the mixture into small egg shapes and place them on a parchment-lined baking sheet.
  4. Freeze the shaped eggs for about 30 minutes to firm up.
  5. Melt the chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  6. Dip each peanut butter egg into the melted chocolate, ensuring it is fully coated. Place back on parchment paper.
  7. Refrigerate coated eggs for at least 1 hour until chocolate is firm.
