  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 teaspoons dried dill weed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • 2 large eggs
  • 2 tablespoons olive oil or butter, for cooking

Instructions

  1. Place the chicken breasts in a resealable bag or shallow dish and pour the dill pickle juice over them. Marinate for at least 1 hour in the refrigerator.
  2. Preheat the oven to 400°F (200°C) if finishing in the oven, or prepare a skillet over medium heat.
  3. In a shallow bowl, combine the Parmesan cheese, panko breadcrumbs, dried dill, garlic powder, onion powder, salt, and pepper.
  4. In a separate bowl, beat the eggs.
  5. Remove chicken from marinade and pat dry with paper towels. Dip each piece into the beaten eggs, then dredge in the Parmesan breadcrumb mixture, pressing gently to adhere.
  6. Heat olive oil or butter in a skillet over medium heat. Cook chicken breasts for 3-4 minutes per side until golden brown and crispy.
  7. If desired, transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  8. Remove from oven, let rest for a few minutes, then serve.

Notes

Serve with a side of roasted vegetables or a fresh green salad for a complete meal. For extra tang, drizzle a little pickle juice or ranch dressing over the chicken before serving.
