  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can corn, drained
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, green onions

Instructions

  1. In a large crockpot, combine the cooked prime rib, onion, garlic, red bell pepper, and green bell pepper.
  2. Add the crushed tomatoes, kidney beans, black beans, corn, and beef broth to the crockpot.
  3. Stir in the chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the vegetables are tender and the flavors have melded.
  5. Taste and adjust seasonings as needed.
  6. Serve hot, topped with shredded cheese, sour cream, and green onions, if desired.
