Crockpot French Dip Sandwiches

These Crockpot French Dip Sandwiches feature tender, slow-cooked beef served on crusty rolls with flavorful au jus for dipping, making an easy and delicious meal.

  • 3-4 lbs beef chuck roast
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1/4 cup soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Sandwich rolls or French rolls, for serving
  • Provolone or Swiss cheese slices (optional)

Instructions

  1. Place the sliced onion and minced garlic in the bottom of the crockpot.
  2. Season the beef chuck roast with salt and pepper and place it on top of the onions and garlic.
  3. In a bowl, mix together beef broth, soy sauce, Worcestershire sauce, thyme, and rosemary; pour over the roast.
  4. Cover and cook on low for 8 hours or until the beef is tender and easily shredded.
  5. Remove the roast from the crockpot and shred with two forks.
  6. Strain the cooking liquid to remove solids and return the broth to the crockpot to keep warm.
  7. To assemble sandwiches, pile shredded beef on rolls, top with cheese if desired, and serve with warm au jus for dipping.

Notes

For extra flavor, toast the sandwich rolls before assembling and serve with a side of pickles or a simple salad.
