  • 1 lb ground beef
  • 1/2 cup Italian breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 large onions, thinly sliced
  • 3 tablespoons butter
  • 2 garlic cloves, minced
  • 1 tablespoon all-purpose flour
  • 4 cups beef broth
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan, parsley, egg, salt, and pepper. Mix gently until just combined.
  2. Form the mixture into 1 1/2-inch meatballs and set aside.
  3. In a skillet, melt butter over medium heat. Add sliced onions and cook slowly, stirring occasionally, until caramelized, about 20 minutes.
  4. Add garlic and cook for 1 more minute.
  5. Sprinkle flour over onions, stir and cook for 2 minutes to remove raw flour taste.
  6. Gradually add beef broth, stirring constantly to avoid lumps.
  7. Add Worcestershire sauce, thyme, and bay leaf. Bring to a simmer.
  8. Transfer onion gravy to the crock pot, add meatballs, and gently stir to coat.
  9. Cover and cook on low for 4–6 hours or until meatballs are fully cooked and tender.
  10. Remove bay leaf before serving. Garnish with additional parsley if desired.

Serve these meatballs over egg noodles or mashed potatoes for a hearty meal, and consider adding a sprinkle of fresh thyme for extra flavor.
