Homemade Crock Pot Creamy Cajun Chicken Pasta

This Crock Pot Creamy Cajun Chicken Pasta is a rich, flavorful dish combining tender chicken, spicy Cajun seasoning, and a creamy sauce for a perfect weeknight dinner.

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1 cup chicken broth
  • 8 oz penne pasta
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Rub the chicken breasts with Cajun seasoning.
  2. Place chicken, bell peppers, garlic, onion, and chicken broth in the crock pot.
  3. Cook on low for 4-5 hours or until chicken is tender.
  4. Remove chicken and shred with two forks.
  5. Add pasta to the crock pot and stir in heavy cream and olive oil.
  6. Cover and cook for another 30-40 minutes until pasta is cooked al dente.
  7. Return shredded chicken to the crock pot and stir in Parmesan cheese. Season with salt and pepper.
  8. Garnish with chopped parsley before serving.

Notes

For a spicier kick, add extra Cajun seasoning or a pinch of cayenne pepper. Serve with a side of garlic bread for a complete meal.
