This Crock Pot Crack Potato Soup is unbelievably creamy and flavorful, thanks to the addition of bacon, cheese, and ranch seasoning. It’s the perfect comforting and easy meal for a chilly day!

Ingredients

  • 6-8 medium potatoes, peeled and cubed
  • 1 (32 ounce) container chicken broth
  • 1 packet ranch dressing mix
  • 1/2 teaspoon garlic powder
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions, for garnish
  • Salt and pepper to taste

Instructions

  1. Place potatoes, chicken broth, ranch dressing mix, and garlic powder in a crock pot.
  2. Cook on low for 6-8 hours or on high for 3-4 hours, or until potatoes are very tender.
  3. Mash potatoes slightly with a potato masher or fork. You can also use an immersion blender to make it smoother, but be careful not to over-blend.
  4. Stir in cream cheese and cheddar cheese until melted and smooth.
  5. Stir in most of the cooked bacon, reserving some for garnish.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with remaining bacon and green onions.

Notes

For an extra creamy soup, stir in a dollop of sour cream or plain Greek yogurt before serving.
