Crock Pot Chicken and Rice

This Crock Pot Chicken and Rice recipe is a hearty and comforting one-pot meal, perfect for effortless weeknight dinners with tender chicken and flavorful rice slow-cooked to perfection.

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 1/2 cups chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat and brown the chicken breasts for 2-3 minutes on each side; set aside.
  2. Place diced onion and minced garlic into the bottom of the crock pot.
  3. Add the rice, chicken broth, thyme, paprika, salt, and pepper. Stir gently to combine.
  4. Place the browned chicken breasts on top of the rice mixture.
  5. Cover and cook on low for 4-5 hours or until the chicken is cooked through and rice is tender.
  6. About 30 minutes before serving, stir in frozen peas and carrots and cover again to finish cooking.
  7. Fluff the rice with a fork before serving and enjoy warm.

Notes

For extra flavor, garnish with fresh parsley and a squeeze of lemon juice before serving.
