This Crock Pot Cheesesteak Tortellini combines tender beef, melty cheese, and hearty tortellini in a rich, savory sauce for an easy and comforting meal perfect for busy weeknights.

  • 1 lb beef sirloin, thinly sliced
  • 1 (9 oz) package cheese tortellini, fresh or frozen
  • 1 green bell pepper, sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 cup beef broth
  • 1 cup shredded provolone cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp olive oil

Instructions

  1. In a skillet, heat olive oil over medium-high heat and sear the sliced beef for 2-3 minutes until browned; transfer to the crock pot.
  2. Add sliced bell pepper, onion, garlic, diced tomatoes, beef broth, oregano, salt, and pepper to the crock pot.
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours until beef is tender.
  4. About 30 minutes before serving, stir in the tortellini and cover to cook until tortellini is tender (about 20-30 minutes).
  5. Once tortellini is cooked, sprinkle the shredded provolone and mozzarella cheese on top, cover, and let melt for 5-10 minutes.
  6. Serve hot, garnished with extra cheese or fresh herbs if desired.

Notes

For an extra creamy texture, stir in a splash of heavy cream or cream cheese just before adding the tortellini.
