  • 1 lb ground turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup shredded cheddar or Mexican blend cheese (optional)
  • 1 lime, cut into wedges

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant and soft, about 3 minutes.
  3. Add ground turkey, breaking it up with a spoon, and cook until browned and cooked through, about 6-8 minutes.
  4. Stir in black beans, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for another 2-3 minutes until heated through.
  5. Warm tortillas by wrapping them in foil and placing in the oven for 5 minutes.
  6. Once tortillas are warm, spoon the turkey and black bean mixture evenly onto each tortilla.
  7. Place the filled tortillas on a baking sheet and sprinkle with cheese if using.
  8. Bake in the oven for 5-7 minutes until the edges are crispy and cheese is melted.
  9. Remove from oven and top with shredded lettuce, diced tomatoes, and cilantro.
  10. Serve immediately with lime wedges.

Notes

For extra crispiness, lightly brush the tortillas with olive oil before baking. Serve with avocado slices or a dollop of sour cream for added creaminess.
