Delight in these rich and buttery Creme Brulee Cookies featuring a caramelized sugar topping that perfectly mimics the classic dessert in cookie form.

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/2 cup granulated sugar (for caramelizing)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract, mixing until combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. Roll dough into 1-inch balls and place on the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-14 minutes until edges are lightly golden.
  8. Remove from oven and immediately sprinkle about 1 teaspoon of sugar on top of each cookie.
  9. Using a kitchen torch, carefully caramelize the sugar until it forms a crisp, golden crust.
  10. Allow cookies to cool completely on the baking sheet to let the sugar topping harden before serving.

For a smoky depth, try sprinkling a pinch of sea salt on the caramelized sugar topping before serving.
