  • 1 pound gnocchi
  • 1 tablespoon olive oil
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 5 ounces baby spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: Pinch of nutmeg

Instructions

  1. Cook gnocchi according to package directions. Drain and set aside.
  2. While gnocchi is cooking, heat olive oil in a large skillet over medium heat. Add mushrooms and cook until softened and lightly browned, about 5-7 minutes.
  3. Add minced garlic to the skillet and cook for 1 minute more, until fragrant.
  4. Stir in baby spinach and cook until wilted, about 2-3 minutes.
  5. Pour in heavy cream and bring to a simmer. Reduce heat to low and simmer for 2-3 minutes, allowing the sauce to thicken slightly.
  6. Stir in Parmesan cheese until melted and smooth. Season with salt, pepper, and a pinch of nutmeg, if desired.
  7. Add cooked gnocchi to the skillet and toss to coat in the creamy sauce.
  8. Serve immediately, garnished with extra Parmesan cheese, if desired.

For an extra layer of flavor, consider adding a sprinkle of red pepper flakes or using truffle oil in the sauce.
