  • 1 whole garlic bulb
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 lemon (zested and juiced)
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 8 oz cooked pasta (such as fettuccine or linguine)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic bulb to expose the cloves, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 40 minutes until soft.
  2. Once cooled, squeeze the roasted garlic cloves out of their skins into a bowl and mash them into a smooth paste.
  3. In a skillet, heat the remaining 1 tablespoon olive oil over medium heat. Add the garlic paste and gently cook for 1-2 minutes.
  4. Pour in the heavy cream, stir well, and bring to a gentle simmer.
  5. Add lemon zest and juice, then mix in the Parmesan cheese until melted and sauce is creamy.
  6. Season with salt and pepper to taste.
  7. Toss the cooked pasta with the sauce until fully coated.
  8. Serve garnished with fresh parsley.

Notes

For extra richness, add a tablespoon of butter when stirring in the cream, or top the dish with toasted pine nuts for added texture.
