This creamy gnocchi dish combines soft potato dumplings with fresh spinach and tangy feta cheese for a comforting and flavorful Italian meal perfect for any night.

  • 1 pound potato gnocchi
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and smooth.
  5. Add the cooked gnocchi to the skillet and toss to coat evenly in the creamy sauce.
  6. Mix in the crumbled feta cheese and season with salt, pepper, and red pepper flakes if using.
  7. Cook for an additional 2 minutes until heated through and well combined.
  8. Serve warm, garnished with extra feta or Parmesan if desired.
