  • 1/2 pound Andouille sausage, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 stalks celery, chopped
  • 1 green bell pepper, chopped
  • 2 green onions, sliced (for garnish)
  • Shredded cheddar cheese (optional, for serving)

Instructions

  1. In a large pot, melt butter over medium heat. Add the Andouille sausage slices and cook until browned, about 5 minutes. Remove sausage and set aside.
  2. Add chopped onion, celery, and green bell pepper to the pot and sauté until softened, about 5-7 minutes.
  3. Stir in minced garlic, Cajun seasoning, and smoked paprika; cook for 1 minute until fragrant.
  4. Sprinkle flour over the vegetables, stirring constantly to form a roux, cooking for 2 minutes.
  5. Gradually whisk in chicken broth, ensuring the mixture is smooth.
  6. Add the diced potatoes, bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  7. Using a potato masher or immersion blender, mash some of the potatoes to thicken the soup while leaving some chunks for texture.
  8. Stir in heavy cream and reserved Andouille sausage; heat through but do not boil.
  9. Season with salt and pepper to taste.
  10. Serve hot, garnished with sliced green onions and shredded cheddar cheese if desired.

Notes

For extra heat, add a dash of hot sauce or cayenne pepper. Serve with crusty bread for a complete meal.
