Caesar Dressing

A classic Caesar dressing made with fresh ingredients, perfect for tossing with crisp romaine lettuce or as a flavorful dip.

Ingredients

  • 2 cloves garlic, minced
  • 4 anchovy fillets, finely chopped
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 cup mayonnaise
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup extra-virgin olive oil

Instructions

  1. In a medium bowl, whisk together minced garlic, chopped anchovies, lemon juice, Dijon mustard, and Worcestershire sauce until combined.
  2. Add mayonnaise and grated Parmesan cheese, and whisk until smooth.
  3. Slowly drizzle in the olive oil while continuously whisking to emulsify the dressing.
  4. Season with salt and freshly ground black pepper to taste.
  5. Use immediately or refrigerate in an airtight container for up to 3 days. Stir before using.

Notes

For a lighter version, substitute mayonnaise with Greek yogurt. This dressing is excellent on Caesar salads or as a dip for fresh vegetables.
