Creamed Spinach

Creamed Spinach is a rich and velvety side dish featuring tender spinach cooked in a smooth, creamy sauce, perfect for pairing with steak or roasted meats.

  • 1 lb fresh spinach, washed and trimmed
  • 2 tbsp unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp ground nutmeg
  • Salt and freshly ground black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil and blanch the spinach for about 1 minute until wilted. Drain and immediately plunge into ice water to stop cooking. Drain again and squeeze out excess water, then chop roughly.
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  3. Add the minced garlic and cook for another 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer. Cook for 3–4 minutes until slightly thickened.
  5. Stir in the chopped spinach, Parmesan cheese, and nutmeg. Cook for an additional 2–3 minutes until everything is heated through and the cheese has melted.
  6. Season with salt and freshly ground black pepper to taste. Serve warm.

Notes

For extra richness, add a splash of cream cheese or a sprinkle of grated Gruyère cheese before serving.
