  • 8 ounces cream cheese, softened
  • 1/2 cup crushed pineapple, well-drained
  • 1/4 cup dried cranberries, chopped
  • 1/4 cup pecans, chopped
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons green onions, finely chopped
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Extra chopped pecans and cranberries for coating

Instructions

  1. In a medium bowl, beat the softened cream cheese until smooth.
  2. Add the drained crushed pineapple, chopped dried cranberries, chopped pecans, shredded cheddar cheese, green onions, and garlic powder to the cream cheese. Season with salt and pepper to taste.
  3. Mix all ingredients until well combined.
  4. Shape the mixture into a ball. Wrap tightly in plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the cheese ball to firm up.
  5. Before serving, unwrap the cheese ball and roll it in the extra chopped pecans and cranberries, pressing gently to help them adhere.
  6. Serve with crackers, pretzels, or vegetables.
