  • 1 tablespoon orange zest
  • 1 cup fresh or frozen cranberries, chopped
  • Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons orange juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, combine granulated sugar, brown sugar, oil, eggs, orange juice, and orange zest. Mix well.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Gently fold in the chopped cranberries.
  6. Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Glaze: In a small bowl, whisk together powdered sugar and orange juice until smooth.
  9. Drizzle the glaze over the cooled bread.
  10. Slice and serve.
