Deliciously creamy and protein-packed, these Cottage Cheese Egg Bites make a perfect quick breakfast or snack that’s both nutritious and satisfying.

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers
  • 2 tbsp chopped green onions
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a muffin tin with non-stick cooking spray.
  2. In a medium bowl, whisk the eggs until smooth.
  3. Add cottage cheese, shredded cheddar, diced bell peppers, green onions, salt, and pepper; mix until well combined.
  4. Pour the mixture evenly into the prepared muffin tin cups.
  5. Bake for 18-20 minutes or until the egg bites are set and slightly golden on top.
  6. Let cool for a few minutes, then remove from the tin and serve warm.

Notes

For extra flavor, add cooked bacon or spinach to the mixture before baking. These bites store well in the fridge for up to 3 days and can be reheated quickly.
