Cottage Cheese Cloud Bread

Light and fluffy Cottage Cheese Cloud Bread combines protein-rich cottage cheese with eggs to create a low-carb, airy bread alternative perfect for sandwiches or snacks.

  • 4 large eggs, separated
  • 1/2 cup cottage cheese
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1 tablespoon grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites from the yolks, placing whites in a large bowl and yolks in another.
  3. Add cottage cheese, salt, garlic powder, and Parmesan cheese to the egg yolks and mix until smooth.
  4. In the bowl with egg whites, add cream of tartar and whip with an electric mixer on high speed until stiff peaks form.
  5. Gently fold the whipped egg whites into the yolk and cottage cheese mixture, being careful not to deflate the whites.
  6. Using a spoon, dollop the batter onto the prepared baking sheet, forming 6–8 rounds.
  7. Bake for 25-30 minutes until the bread is golden and firm to touch.
  8. Remove from oven and allow to cool slightly before serving.

Notes

For extra flavor, try adding fresh herbs like chives or rosemary to the batter, or use these cloud breads as a base for open-faced sandwiches.
