Homemade Cottage Cheese Blueberry Cloud Bread

Light, fluffy, and naturally tangy, this Cottage Cheese Blueberry Cloud Bread combines protein-rich cottage cheese with fresh blueberries for a nutritious and delicious low-carb treat.

  • 3 large eggs, separated
  • 1/2 cup cottage cheese
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon honey (optional)
  • 1/4 cup fresh blueberries
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the egg yolks, cottage cheese, honey (if using), vanilla extract, and salt until smooth.
  3. In a separate large bowl, beat the egg whites and cream of tartar with an electric mixer until stiff peaks form.
  4. Gently fold the egg white mixture into the cottage cheese mixture, being careful not to deflate the fluffiness.
  5. Fold in the fresh blueberries gently to distribute evenly.
  6. Spoon the batter onto the prepared baking sheet, forming 6 equal rounds.
  7. Bake for 25–30 minutes or until golden brown and set.
  8. Allow to cool slightly before serving. Enjoy warm or at room temperature.

Notes

For extra flavor, try sprinkling a little cinnamon or lemon zest into the batter before baking. Serve with a dollop of Greek yogurt or fresh fruit for a delightful breakfast or snack.
