Delicious Cornbread Casserole

This comforting Cornbread Casserole combines sweet corn, savory cheese, and creamy sour cream for a delicious and easy-to-make side dish or main course. Perfect for potlucks and family gatherings!

  • 1 (8.5 ounce) package cornbread mix
  • 1 (14.75 ounce) can creamed corn
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 2 large eggs, lightly beaten
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 8×8 inch baking dish.
  2. In a large bowl, combine the cornbread mix, creamed corn, drained corn, sour cream, melted butter, and eggs. Mix well.
  3. Stir in the shredded cheddar cheese and green onions (if using).
  4. Pour the mixture into the prepared baking dish.
  5. Bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  6. Let cool slightly before serving.

Notes

For a spicier kick, add a diced jalapeño to the batter. Serve warm with a dollop of sour cream or a sprinkle of extra cheddar cheese.
