Bowl of Copycat Panera Potato Soup

Enjoy a warm and comforting bowl of homemade potato soup that tastes just like Panera’s classic. This creamy and flavorful soup is easy to make and perfect for a cozy meal.

  • 5 slices bacon, diced
  • 1 medium yellow onion, chopped
  • 2 stalks celery, chopped
  • 4 cups chicken broth
  • 1 ½ pounds Yukon Gold potatoes, peeled and cubed
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup heavy cream
  • ½ cup shredded cheddar cheese, for topping
  • 2 tablespoons chopped fresh chives, for topping

Instructions

  1. In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon grease in the pot.
  2. Add the chopped onion and celery to the pot and cook until softened, about 5-7 minutes.
  3. Pour in the chicken broth, add the cubed potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Use an immersion blender to partially blend the soup until it reaches your desired consistency. You can also use a regular blender, but be careful when blending hot liquids.
  5. Stir in the heavy cream and heat through. Do not boil.
  6. Ladle the soup into bowls and top with shredded cheddar cheese, cooked bacon, and fresh chives.
  7. Serve immediately and enjoy!

Notes

For a richer flavor, use chicken stock instead of chicken broth. You can also add a dollop of sour cream or plain Greek yogurt on top for extra creaminess.
