Coconut Curry Baked Cod

Delight in tender cod fillets baked in a creamy coconut curry sauce, offering a flavorful and healthy meal perfect for weeknight dinners.

  • 4 cod fillets (about 6 oz each)
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp lime juice
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onion until translucent, about 3-4 minutes.
  3. Add garlic and ginger, cook for 1 minute until fragrant.
  4. Stir in red curry paste and cook for another minute.
  5. Pour in the coconut milk and simmer for 5 minutes, stirring occasionally.
  6. Add lime juice, and season the sauce with salt and pepper to taste.
  7. Place cod fillets in a baking dish and pour the coconut curry sauce evenly over them.
  8. Bake for 15-20 minutes, or until the fish flakes easily with a fork.
  9. Garnish with fresh cilantro and serve warm.

Notes

Serve with steamed jasmine rice or quinoa for a complete meal, and add sliced red chilies if you prefer extra heat.
