This Citrus Berry Burnt Cheesecake combines a rich, creamy texture with tangy citrus and sweet berry flavors, giving a delightful twist to the classic burnt cheesecake.

Ingredients

  • 400g cream cheese, softened
  • 150g granulated sugar
  • 3 large eggs
  • 200ml heavy cream
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tsp vanilla extract
  • 150g mixed berries (blueberries, raspberries, strawberries)
  • 20g all-purpose flour
  • Butter (for greasing)

Instructions

  1. Preheat oven to 200°C (392°F). Grease a 20cm springform pan with butter and line the base with parchment paper.
  2. In a large bowl, beat softened cream cheese and sugar until smooth and creamy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Pour in heavy cream, lemon zest, orange zest, and vanilla extract. Mix until fully incorporated.
  5. Sift flour into the mixture and fold gently to combine without lumps.
  6. Fold in half of the mixed berries gently.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 45–50 minutes until the top is deeply golden brown and slightly burnt-looking but the center is still a bit wobbly.
  9. Remove from oven and let cool completely in the pan, then refrigerate for at least 4 hours or overnight.
  10. Before serving, top with remaining fresh berries and a light dusting of powdered sugar if desired.

Notes

For an extra burst of flavor, serve with a drizzle of citrus glaze or a spoonful of berry compote.
