Cinnamon Filling:

  • 2 tablespoons unsalted butter, softened
  • 1/4 cup packed light brown sugar
  • 1 tablespoon ground cinnamon

Icing:

  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Prepare the Dough: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  2. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. Make Cinnamon Filling: In a small bowl, combine the softened butter, brown sugar, and cinnamon until smooth.
  4. Assemble Cookies: Roll out the dough on a lightly floured surface to about 1/4-inch thickness. Spread the cinnamon filling evenly over the dough.
  5. Roll and Slice: Carefully roll the dough into a tight log. Slice the log into 1/2-inch thick rounds.
  6. Bake: Place the cookies on a baking sheet lined with parchment paper. Bake in a preheated oven at 375°F (190°C) for 8-10 minutes, or until the edges are lightly golden brown.
  7. Cool and Ice: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  8. Prepare Icing: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk if needed to reach desired consistency.

Notes

For a richer flavor, use brown butter in the dough. You can also add chopped nuts to the cinnamon filling for extra texture.
