  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 2 tablespoons brown sugar (for filling)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then add vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. In another bowl, beat the cream cheese, powdered sugar, vanilla extract, and brown sugar until smooth to make the cheesecake filling.
  7. Take about 2 tablespoons of cookie dough, flatten it in your palm, add a teaspoon of cheesecake filling in the center, then wrap the dough around filling and seal it completely.
  8. Place stuffed dough balls on the prepared baking sheet about 2 inches apart.
  9. Bake for 12-15 minutes or until edges are lightly golden.
  10. Remove from oven and let cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra touch, drizzle with cream cheese glaze or sprinkle with powdered sugar just before serving.
