Christmas Pinwheel Cookies

These festive Christmas Pinwheel Cookies are a delightful treat to bake and share during the holiday season. Their colorful swirls and buttery flavor make them a guaranteed crowd-pleaser.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Red food coloring
  • Green food coloring

Instructions

  1. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, vanilla extract, and almond extract.
  2. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. Divide the dough in half. In one half, knead in red food coloring until evenly distributed. In the other half, knead in green food coloring until evenly distributed.
  4. Wrap each half of the dough in plastic wrap and chill for at least 1 hour.
  5. On a lightly floured surface, roll out each dough into a 9×12 inch rectangle.
  6. Place the red dough rectangle on top of the green dough rectangle.
  7. Starting from one of the long edges, tightly roll up the dough into a log. Wrap in plastic wrap and chill for at least 2 hours, or overnight.
  8. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  9. Slice the chilled dough log into 1/4-inch thick rounds.
  10. Place the cookies on the prepared baking sheets, about 1 inch apart.
  11. Bake for 8-10 minutes, or until the edges are lightly golden brown.
  12. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a festive touch, sprinkle the cookies with sanding sugar before baking.
