  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • For the Chocolate Ganache Topping:
  • 4 ounces semi-sweet chocolate, chopped
  • 1/4 cup heavy cream
  • Optional: Chopped peanuts for garnish

Instructions

  1. Make the Crust: In a medium bowl, combine chocolate cookie crumbs and melted butter. Press the mixture evenly into the bottom of a 9-inch pie plate.
  2. Prepare the Filling: In a large bowl, beat cream cheese and peanut butter until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined.
  3. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture.
  4. Pour the filling into the prepared crust and spread evenly. Refrigerate for at least 4 hours, or preferably overnight, to allow the pie to set.
  5. Make the Ganache: Place chopped chocolate in a heat-proof bowl. Heat heavy cream in a small saucepan until simmering. Pour the hot cream over the chocolate and let it sit for 1 minute. Stir until smooth and glossy.
  6. Pour the chocolate ganache over the chilled pie. Spread evenly.
  7. Optional: Sprinkle chopped peanuts over the ganache.
  8. Refrigerate for another 30 minutes to allow the ganache to set.
  9. Slice and serve chilled.
