  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 8 ounces semi-sweet chocolate, chopped
  • 1 1/2 cups heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, combine sugar, buttermilk, oil, egg, and vanilla extract. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Stir in boiling water until batter is thin.
  6. Pour batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cake cool completely in the pan before inverting onto a serving plate.
  8. While the cake is cooling, prepare the chocolate mousse. Melt the chopped chocolate in a heatproof bowl set over a saucepan of simmering water, stirring until smooth. Remove from heat and let cool slightly.
  9. In a large bowl, whip heavy cream with powdered sugar until stiff peaks form.
  10. Gently fold the melted chocolate into the whipped cream until combined.
  11. Spread the chocolate mousse evenly over the cooled cake.
  12. Refrigerate for at least 2 hours to allow the mousse to set before serving.
