  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1 cup heavy cream
  • 8 oz semisweet chocolate, chopped
  • 2 tbsp powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking pan.
  2. In a saucepan, melt the butter over medium heat. Remove from heat and stir in sugar, eggs, and vanilla.
  3. Beat in cocoa, flour, salt, and baking powder until well combined.
  4. Pour batter into the prepared pan and bake for 20-25 minutes or until the edges are set.
  5. Let brownies cool completely in the pan.
  6. For the mousse, heat heavy cream in a saucepan until just simmering, then pour over chopped chocolate. Let sit 2 minutes, then stir until smooth.
  7. Chill the chocolate mixture until thickened, then whip in powdered sugar until light and fluffy.
  8. Spread the chocolate mousse evenly over the cooled brownies.
  9. Refrigerate for at least 1 hour before serving.

Notes

For extra indulgence, sprinkle sea salt flakes on top of the mousse before chilling or add fresh berries for a fruity contrast.
