  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1 cup powdered sugar (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a separate large bowl, cream butter and granulated sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and peppermint extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  6. Cover the dough and refrigerate for at least 1 hour to firm up.
  7. Using a spoon or cookie scoop, form dough balls about 1 inch in diameter.
  8. Roll each ball generously in powdered sugar to coat completely.
  9. Place coated dough balls on the prepared baking sheet, spacing about 2 inches apart.
  10. Bake for 10-12 minutes until cookies are set but still soft in the center.
  11. Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra minty punch, drizzle melted dark chocolate over cooled cookies or add finely chopped peppermint candies to the dough before baking.
