Ingredients

Scale
  • 200g chocolate cookies, crushed
  • 100g unsalted butter, melted
  • 300g cream cheese, softened
  • 150g granulated sugar
  • 2 large eggs
  • 100ml sour cream
  • 50g cocoa powder
  • 1 tsp vanilla extract
  • 50g dark chocolate, melted (for decorating)

Instructions

  1. Preheat the oven to 160°C (320°F) and grease a mini cheesecake mold or muffin tin.
  2. Mix crushed chocolate cookies with melted butter until well combined. Press the mixture firmly into the base of each mold to form the crust.
  3. In a bowl, beat the cream cheese and sugar until smooth and creamy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in sour cream, cocoa powder, and vanilla extract until the batter is uniform.
  6. Pour the cheesecake batter over the crusts, filling each mold about 3/4 full.
  7. Bake for 20-25 minutes or until the centers are set but still slightly jiggly.
  8. Remove from oven and cool to room temperature, then refrigerate for at least 3 hours.
  9. Once chilled, use melted dark chocolate and icing candies to decorate each cheesecake into a cute chocolate gnome with hats and beards.
  10. Serve chilled and enjoy the whimsical dessert.
