Chinese Steamed Cod Fish with Ginger Scallion Sauce

Delicate cod fillets steamed to perfection and topped with a fragrant ginger scallion sauce, this Chinese classic offers a light, flavorful dish perfect for a healthy meal.

  • 2 cod fillets (about 6 oz each)
  • 2 stalks scallions, finely sliced
  • 1 thumb-sized piece of fresh ginger, julienned
  • 2 tablespoons light soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 1/4 teaspoon salt
  • 1 teaspoon Shaoxing wine or dry sherry (optional)
  • Fresh cilantro leaves for garnish (optional)

Instructions

  1. Rinse cod fillets and pat dry with paper towels. Lightly season both sides with salt.
  2. Place the cod fillets on a heatproof plate suitable for steaming.
  3. Set up a steamer or a wok with a steaming rack and bring water to a boil.
  4. Carefully place the plate with cod into the steamer, cover, and steam over medium-high heat for 7-9 minutes until the fish is just cooked and flakes easily.
  5. Meanwhile, heat vegetable oil in a small pan over medium heat. Add the julienned ginger and sliced scallions, frying gently until fragrant but not browned, about 1-2 minutes.
  6. Turn off the heat and stir in the light soy sauce, sesame oil, and Shaoxing wine if using.
  7. Once the fish is cooked, carefully pour the hot ginger scallion sauce over the cod fillets.
  8. Garnish with fresh cilantro leaves if desired and serve immediately with steamed rice.

Notes

For extra flavor, add a few drops of chili oil on top or serve with sautéed bok choy for a complete meal.
