This Chicken Zucchini Casserole is a comforting and healthy meal perfect for busy weeknights. It’s packed with tender chicken, fresh zucchini, and a creamy sauce, all baked to golden perfection.

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 medium zucchini, thinly sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.75 oz) can condensed cream of chicken soup
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup bread crumbs
  • 2 tablespoons melted butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook chicken over medium heat until browned and cooked through. Season with salt and pepper.
  3. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. In a large bowl, combine cooked chicken mixture, zucchini, cream of chicken soup, sour cream, and milk. Mix well.
  5. Pour mixture into a greased 9×13 inch baking dish.
  6. Top with cheddar cheese and bread crumbs. Drizzle with melted butter.
  7. Bake for 25-30 minutes, or until golden brown and bubbly.
  8. Let stand for 5 minutes before serving.

Notes

Serve with a side salad or crusty bread for a complete meal. For a spicier kick, add a pinch of red pepper flakes to the chicken mixture.
