Chicken Orzo Skillet

This Chicken Orzo Skillet is a quick and delicious one-pan meal combining tender chicken, flavorful orzo pasta, and fresh vegetables for a satisfying dinner.

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 ½ cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt, pepper, and oregano, and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  2. In the same skillet, add the diced onion and sauté until translucent, about 3 minutes. Add garlic and cook for another 30 seconds until fragrant.
  3. Add the orzo to the skillet and toast for 1-2 minutes, stirring frequently.
  4. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 8-10 minutes, or until the orzo is tender and most of the liquid is absorbed.
  5. Stir in the cooked chicken, cherry tomatoes, and spinach. Cook for another 2-3 minutes until the spinach wilts and tomatoes soften.
  6. Remove from heat and stir in Parmesan cheese. Adjust seasoning with salt and pepper if needed.
  7. Garnish with chopped fresh parsley and serve warm.

Notes

For extra flavor, add a squeeze of fresh lemon juice before serving or top with toasted pine nuts for a crunchy texture.
