chicken noodle soup

A comforting and hearty chicken noodle soup made with tender chicken, fresh vegetables, and flavorful broth, perfect for any season.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until translucent.
  2. Add carrots and celery; cook for 5 minutes until slightly softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken, thyme, and parsley. Reduce heat and simmer for 10 minutes.
  5. Add egg noodles and cook according to package instructions (about 7-8 minutes) until tender.
  6. Season with salt and pepper to taste.
  7. Serve hot and enjoy your homemade chicken noodle soup.
