Chicken Ginger Rice

This fragrant Chicken Ginger Rice combines tender chicken with aromatic ginger and jasmine rice for a comforting and flavorful meal that’s quick to prepare.

  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil
  • 1 lb boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • Salt and pepper, to taste

Instructions

  1. Rinse the jasmine rice under cold water until water runs clear. Drain well.
  2. In a medium pot, bring chicken broth to a boil. Add the rice, reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked and liquid is absorbed.
  3. While rice cooks, heat vegetable oil in a large skillet over medium-high heat.
  4. Add minced ginger, garlic, and chopped onion; sauté until fragrant and translucent, about 2-3 minutes.
  5. Add chicken pieces to the skillet. Cook, stirring occasionally, until chicken is browned and cooked through, about 6-8 minutes.
  6. Stir in soy sauce, sesame oil, salt, and pepper. Cook for another 2 minutes to combine flavors.
  7. Fluff the cooked rice with a fork and add it to the skillet with chicken mixture. Stir well to combine and heat through.
  8. Garnish with sliced green onions and serve hot.

Notes

For added freshness, serve with a side of steamed vegetables or a squeeze of lime juice to brighten the flavors.
