  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 8 ounces cooked ham, diced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 8 ounces Swiss cheese, shredded
  • Salt to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more, until fragrant.
  3. Pour in chicken broth and bring to a simmer.
  4. Add shredded chicken, diced ham, Dijon mustard, thyme, and pepper. Stir to combine.
  5. Reduce heat to low, cover, and simmer for 15 minutes to allow flavors to meld.
  6. Stir in heavy cream and Swiss cheese. Cook until cheese is melted and soup is heated through, about 5 minutes. Be careful not to boil.
  7. Season with salt to taste.
  8. Garnish with fresh parsley before serving.

Notes

For a thicker soup, whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the soup during the last few minutes of cooking.
