Chicken Carbonara

A creamy and delicious Chicken Carbonara combining tender chicken, crispy pancetta, and a rich parmesan sauce for a comforting Italian-inspired meal.

  • 2 boneless, skinless chicken breasts
  • 200g spaghetti
  • 100g pancetta, diced
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the spaghetti in salted boiling water according to package instructions until al dente. Drain, reserving 1/2 cup of pasta water.
  2. In a skillet, heat olive oil over medium heat and cook pancetta until crispy. Remove pancetta and set aside.
  3. Season chicken breasts with salt and pepper, then cook in the same skillet until golden brown and cooked through, about 5-7 minutes per side. Let rest, then slice thinly.
  4. In a bowl, whisk together eggs, Parmesan cheese, and minced garlic.
  5. Add the cooked spaghetti back into the skillet with pancetta over low heat. Remove from heat and quickly stir in the egg and cheese mixture, tossing to create a creamy sauce. Add reserved pasta water a little at a time if needed to loosen the sauce.
  6. Fold in sliced chicken and season with additional salt and pepper if necessary.
  7. Serve immediately garnished with chopped fresh parsley and extra Parmesan if desired.

Notes

For extra richness, add a splash of heavy cream or substitute pancetta with crispy bacon if preferred.
