chicken and zucchini bake

This Chicken and Zucchini Bake is a simple, healthy, and delicious weeknight meal. Tender chicken and zucchini are baked together in a flavorful sauce for an easy clean-up.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 medium zucchini, sliced
  • 1 red bell pepper, chopped
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, toss chicken, zucchini, bell pepper, and onion with olive oil, salt, pepper, and oregano.
  3. Spread the mixture evenly into a 9×13 inch baking dish.
  4. In a separate bowl, combine diced tomatoes, chicken broth, and minced garlic. Pour over the chicken and zucchini mixture.
  5. Sprinkle Parmesan cheese evenly over the top.
  6. Bake for 30-35 minutes, or until chicken is cooked through and zucchini is tender.
  7. Let stand for 5 minutes before serving.

Notes

Serve over rice or quinoa for a more complete meal. You can also add other vegetables like mushrooms or yellow squash.
