This Chicken and Spinach Casserole is a hearty, wholesome dish combining tender chicken with vibrant spinach in a creamy baked casserole perfect for a satisfying family dinner.

  • 2 cups cooked chicken, shredded
  • 3 cups fresh spinach, chopped
  • 1 cup cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
  3. Add chopped spinach and cook until wilted. Remove from heat.
  4. In a large bowl, combine cooked chicken, sautéed spinach mixture, cream of mushroom soup, sour cream, and half of the shredded cheddar cheese. Mix well.
  5. Season with salt and pepper to taste.
  6. Transfer mixture to a greased baking dish and spread evenly.
  7. Sprinkle remaining cheddar cheese and breadcrumbs evenly on top.
  8. Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.
  9. Let cool for 5 minutes before serving.

Notes

For extra flavor, sprinkle some crushed red pepper flakes or fresh herbs like thyme before baking, and serve with a side of garlic bread.
